Returning to Flemington Racecourse for the fifteenth consecutive year, the popular birdcage marquee was swarmed with Australian sporting superstars, celebrities, and influencers, all enjoying the premium hospitality of the extravagantly-curated marquee.
Australia’s premium espresso giant, Lavazza, channeled their Italian cultural roots, choosing Milan to be their inspiration for the marquee this year. Designer Neale Whitaker of Vogue Living took the lead on the creation and leaned on Milan’s international shopping destination, Galleria, for the 2016 marquee theme. The space boasted Tom Dixon Plane chandeliers, traditional terracotta flooring and a 360 degree view of Galleria, with the walls and ceiling of the marquee replicating the lavishness of the Italian mid-century building. Often referred to as the worlds most beautiful shopping mall and the epicentre of the fashion capital, Galleria proved to be the perfect inspiration to provide guests with a true sense of traditional Italian lifestyle.
While Whitaker was responsible for the marquee style and design, renowned Australian chef Adam D’Sylva created four signature dishes on the Italian menu. Drawing from his Italian heritage, the owner of popular Melbourne restaurants Coda and Tonka served one of his signature Italian dishes on each day at the Melbourne Cup Carnival. D’Sylva’s bespoke creations, exclusively designed for the Lavazza Birdcage marquee, included herb and panko crumbed lamb cutlets with chimmi churri sauce, mushroom and goats cheese tortellini with black tartufo sauce, quail breast saltimbocca with smoked scarmozza cheese and crispy sage and John Dory fillets with Acqua Pazza.
Once it was time for the sweets to appear, guests inside the Lavazza marquee were treated to desserts topped with Lavazza Prontissimo! – the brands’ newest instant coffee range. Desserts included Lavazza Prontissimo! crème brülee with pistachio and cranberry biscotti and figs with Lavazza Prontissimo! masala syrup, white chocolate ice cream and biscotti.
Lucky guests were also treated to Lavazza Prontissimo! fresh caviar, a real once in a lifetime treat for the eyes and the palette!
The Lavazza birdcage marquee was as usual is labelled as the “it” place to be, providing guests with the ultimate ‘passegiatta’ experience – a social stroll at the 2016 Melbourne Cup Carnival.
